Quick Ratatouille

Ratatouille is a bright and chunky typical Mediterranean vegetable stew, rich with olive oil and fragrant with garlic and herbs.

Servings: 4 as an entree; 6 when paired with other dishes

Prep Time: 5 Minutes

Cook Time: 25 Minutes

Total Time: 30 Minutes

INGREDIENTS

  • 3.5 cups frozen grilled Mediterranean veggies

  • 3 tablespoons extra virgin olive oil, plus more for serving

  • 1 medium yellow onion, diced

  • 3 large cloves garlic, chopped

  • 28 oz. can diced or crushed tomatoes (fire roasted , if available)

  • 1 cup water (or red wine)

  • 2 teaspoons fresh chopped thyme, plus more for serving

  • 3/4 teaspoon sugar

  • 1/4 teaspoon crushed red pepper flakes (optional)

  • 3 tablespoons chopped fresh basil (optional)

  • salt & pepper

INSTRUCTIONS

  1. Heat 2 tablespoons of oil in a large nonstick pan over medium heat. Add the onion; cook, stirring frequently, for about 5 minutes. Add the garlic and continue cooking for about 1 more minute, but do not brown.

  2. Add the tomatoes with their juices, thyme, sugar, crushed red pepper flakes (if using), water or wine, and 1 teaspoon salt. Cook, stirring occasionally, until the tomatoes form a sauce, 8 to 10 minutes.

  3. Add the frozen grilled veggies to the pan; bring to a gentle boil, then reduce the heat to low, and simmer, uncovered, for about 10 minutes or until the veggies have softened.

  4. Taste and adjust seasoning, if necessary. Sprinkle with fresh basil and thyme, drizzle with remaining olive oil if desired, and serve with baguette, over pasta, or on its own. A green salad is a nice accompaniment.
