Suggested Usage: Kidney Bean Curry

Ingredients

  • 1 tbsp vegetable oil

  • 1 onion finely chopped

  • 2 garlic cloves, finely chopped

  • thumb-sized piece of ginger, peeled and finely chopped

  • handful of cilantro leaves chopped

  • 1.5 tsp ground cumin

  • .5 tsp ground paprika

  • 1 tsp garam masala seasoning

  • 8 oz. canned chopped tomatoes

  • 1 pouch of Jyoti Kidney beans, drained

  • 1/2 - 3/4 cup of water (depending on desired thickness of curry)

  • cooked basmati rice, to serve

    1. Heat oil over medium heat. Add the onion and a pinch of salt and cook slowly, stirring occasionally, until softened and just starting to color. Add the garlic and ginger and cook for a further 2 mins, until fragrant.

    2. Add the spices to the pan and cook for another 1 min. Tip in the chopped tomatoes and kidney beans and water, then bring to a boil.

    3. Turn down the heat and simmer for 15 mins until the curry is nice and thick. Season to taste, then serve with the Basmati rice and the chopped cilantro leaves.
