Broccoli Salad with Yogurt Dressing

A delicious alternative to cole slaw or potato salad, with contrasting flavors, textures, and a good dose of healthy!  The bacon is optional if you prefer a vegetarian dish.


Serves: 6 Preparation time 15 min.


Ingredients

  • 4 cups of Pinwheel broccoli florets (frozen)

  • 1/4 cup red onion, diced

  • 1/4 cup sunflower kernels or toasted pine nuts

  • 1/4 cup raisins

  • 1/2 cup plain Greek yogurt

  • 1 Tbsp sugar

  • 1 1/2 Tbsp white vinegar

  • 3-4 slices bacon,, cooked crisp and crumbled (optional)

Instructions

  1. Heat the broccoli florets and 2 Tbsp of water in the microwave in a covered microwave-safe dish on high 2-3 minutes until heated through.

  2. Combine broccoli, sunflower kernels/pine nuts, raisins, and bacon in a large bowl. Set aside.

  3. Stir together Greek yogurt, sugar, and vinegar in a small bowl. Pour over the top of broccoli mixture and stir evenly to coat.

  4. Tastes great when served immediately. If you need to refrigerate it for later, you may want to prepare a bit more of the dressing to add in case it gets a little dry.
